Tortellini Salad

Recipe from Brand-Name Diabetic Meals in Minutes
from the American Diabetes Association

    8 oz frozen cheese-filled tortellini (about 2 cups)
    1/2 cup refrigerated Marie's Zesty fat free Italian vinaigrette
    1 small cucumber, diced (about 1 cup)
    1 medium tomato, diced (about 1 cup)
    1 green onion, sliced (about 2 tbsp)
    Assorted Salad Greens (optional)


1. Cook tortellini according to package directions. Drain in colander. In medium bowl, toss hot tortellini with vinaigrette; cool 10 minutes.

2. Add cucumber, tomato, and onion; toss gently to coat. Serve at room temperature or cover and refrigerate until serving time. Serve on salad greens. If desired, garnish with plum tomato and fresh sage.


Makes about 4 1/2 cups

K - I made this tonight, freezing half, ate half for dinner. It's pretty good! Some things I'd do different:

Use a bit less salad dressing unless I'm actually gonna eat it over greens, which I did not. I ate it plain. I also had about 2 tbsps of salad oil in the bottom of the bowl when I was done.

Might put some pine nuts and onion in it as well, next time.

Good stuff.
